The Siúcra Shack

In Canada, The Sugar (or, in Irish, Siúcra) Shack is a magical place in the woods where, in very early Spring, when there is still snow on the ground, our maple syrup gets tapped and boiled down. Many Canadian children can attest that there is no sweeter place; especially when the syrup-maker pours hot, freshly boiled maple syrup on the snow to create maple taffy for them to enjoy.

Here in Ireland, I’ve brought my Canadian recipes and culinary training and combined them with the best Tipperary butter, our own free-range eggs and fresh milk from our dairy to create my menu for The Siúcra Shack. If you’re visiting Ireland and want to come say hello, you’ll usually find me (and a selection of my Canadian-inspired goodies) at my good friend Lucy’s café The Green Sheep in Thurles, Co. Tipperary.
